Gyros don’t need too much explaining, but this one was so delicious we couldn’t resist at least posting something. We made this one on a day when we thought we didn’t have enough food, and it turned out being our best lunch in months! We used leftover veggies (onions, cucumber, alfalfa sprouts, green pepper) and some crumbled up veggie burger mix (made with (also) leftover: quinoa, lentils, cannellini beans, nutritional yeast) and put them on naan bread (Rudi’s from Boulder, CO) spread with vegan cream cheese and homemade hummus.
We finished it with tahini sauce to really put it over the top.
The point is: gyros or any type of wrap are so easy and always end up being delicious even when you’re running low on food. So, as always, experiment!
