Dairy-Free Cream Cheese

We all love a bagel and schmear, but let’s be honest: is it really the best thing in the world to start your day off with a hunk of cheese? There are a couple non-dairy cream cheeses on the market, and some of them get pretty close to the real thing, but sometimes the list of ingredients has you googling the periodic table- also not ideal. So we used our food processor to create our own version.

Using a 16oz organic tofu, we blend it together with whatever oil we want, some nutritional yeast, lemon, salt and then either scallions, roasted garlic, basil- any flavor you like. A thickener like xantham gum or agar will help it resemble cream cheese, but we usually leave that out and it turns out just fine. Try it yourself and have fun!
